Bakpao Tilapia

Ingredients

Baking ingredients:

  1. Pao premix flour: 450 g
  2. Powdered milk: 20 g
  3. Salt: 1 tsp
  4. Baking powder: ½ tsp
  5. Granulated sugar: 1 tbsp
  6. Instant yeast: 10 g
  7. Warm milk: 300 ml

Filling ingredients:

  1. Regal Springs Tilapia fillet: 200 g
  2. Lime: 1 piece
  3. Onion, chopped: 30 g
  4. Shallots, chopped: 15 g
  5. Garlic, chopped: 20 g
  6. Green onions, sliced: 15 g
  7. Onion oil: 2 tbsp
  8. Sesame oil: 3 tbsp
  9. Ground pepper: ½ tsp
  10. Palm sugar: 25 g
  11. Mushroom bouillon powder: 1 tsp
  12. Fish sauce: 2 tbsp
  13. Sweet soy sauce: 2 tbsp
  14. Oyster sauce: 1 tbsp
  15. Thick coconut milk: 30 ml
  16. Cornstarch solution: 50 ml

Instructions

  1. Roughly chop the tilapia and add lime juice. Set aside for a while.
  2. Heat the onion oil and sesame oil, add the chopped onion, shallots, and garlic. Sauté until fragrant
  3. Add the chopped tilapia and sliced green onions. Sauté again for 1 minute.
  4. Add pepper, palm sugar, mushroom broth, fish sauce, sweet soy sauce, oyster sauce, and coconut milk.
  5. Stir gently and cook over low heat for 4-5 minutes.
  6. Pour in the cornstarch mixture, stir, and cook for 1 minute. Turn off the heat.
  7. Mix milk, sugar, and instant yeast. Stir and let stand for 5 minutes.
  8. Mix premixed pao flour, milk powder, baking powder, and salt. Stir.
  9. Pour the milk mixture into the flour mixture and stir gently.
  10. Knead the dough until smooth, then cover and let it rest for 30 minutes.
  11. Knead again for 5 minutes, then divide the dough into portions weighing 50-60 g each.
  12. Add 1 tablespoon of tilapia filling to each portion, repeating until all the dough is used up.
  13. Cover the Tilapia buns with a clean cloth/towel for 10 minutes.
  14. Heat the steamer, place the Tilapia buns inside, and steam for 15 minutes.
