Ingredients:

  1. Regal Springs Indonesia Tilapia Fillet 200 g
  2. Lime juice 1 tbsp
  3. Salt 1 ½ tsp
  4. Ground white pepper ½ tsp
  5. Ground coriander ½ tsp
  6. Ground garlic 1 tsp
  7. Granulated sugar 2 tsp
  8. Powdered broth 1 tsp
  9. Ginger, crushed 3 cm
  10. Galangal, crushed 4 cm
  11. Lemongrass, crushed 1 stalk
  12. Bay leaves 2 leaves
  13. Lime leaves 3 leaves
  14. Green onion stalks, sliced 25 g
  15. Star fruit, sliced 4-5 pieces
  16. Green tomatoes, sliced 3 pieces
  17. Red tomatoes, sliced 2 pieces
  18. Red cayenne peppers, whole 15 pieces
  19. Large red chilies, sliced 2 pieces
  20. Large green chilies, sliced 2 pieces
  21. Water 300 ml
  22. Liquid coconut milk 400 ml
  23. Banana leaf 1 piece
  24. Fried shallots 1 tbsp

Spice paste:

  1. Red onion 7 cloves
  2. Garlic 5 cloves
  3. Candlenuts, roasted 3 pieces
  4. Onion oil 50 ml

Instructions

  1. Cut the tilapia into pieces, marinate with ½ teaspoon of salt, ground pepper, ground coriander, ground garlic, and lime juice. Set aside for a while.
  2. Prepare a pan, add the ground spices and cook over low heat until cooked.
  3. Add ginger, galangal, lemongrass, bay leaves, and lime leaves. Sauté again until fragrant.
  4. Add water, salt, sugar, and bouillon powder. Stir and cook until boiling.
  5. Reduce heat, then pour in coconut milk while stirring slowly. Cook for 5 minutes.
  6. Add the tilapia, spring onions, star fruit, tomatoes, and chilies. Stir.
  7. Place the banana leaves and cover the pan, then cook for 5-6 minutes. Turn off the heat.
  8. Open the pan lid and remove the banana leaves. Sprinkle with fried onions and serve.
